Ok, I haven't done a recipe in awhile, so preheat the oven.

Recipe: Banana Nut Bread

(Note: 2 medium bananas = 1 mashed cup of banana)

This recipe makes 2 loaves

3 1/2 Cups All Purpose Flour
2 1/2 tsps baking powder
1 tsp baking soda
1 1/2 tsp salt
1 1/3 cups sugar
2/3 cups shortening
4 eggs
4 TBSPs milk
2 cups Mashed Bananas (4 Medium Bananas)
1/2 cups Chopped nuts

Preheat the oven to 350 degrees

Stir together flour, baking powder, baking soda, and salt. Set aside.

In a mixer bowl beat sugar and shortening together until light, scrapping the side of the bowl often. Add eggs one at a time and milk, beating until smooth after each addition. Add flour mixture and bananas alternately to creamed mixture, beating smooth after each addition. Fold in nuts.

Turn batter into a lightly greased baking pan (8x4x2 inch loaf pan. Bake in a 350 degree oven for 60-65 minutes or until wooden toothpick inserted in near the center of the loaf comes out clean. Cool in pan 10 minutes. Remove from pan; Cool. (For easier slicing wrap and store overnight.)

Tips
1. Blend sugar, shortening, bananas and everything in a large mixing bowl with a high speed mixer set on low to medium.

2. Finely chop the nuts.

3. You can half or double this recipe very easily.

4. For heartier bread try replacing one cup of flour with one cup of whole wheat flour. If you do this add a little more milk (1 or 2 TBSPs) and some more sugar (a bout another 2 or 3 TBSPs)



I love this stuff! Slice 1/4 to 1/2 inch thick, then toast. Cover with warm butter.
